Colored spirit vinegar (often caramelized to give it an amber hue) has the same technical properties as crystal (white) spirit vinegar, but with a more appealing presentation for certain culinary uses. It remains very acidic (often at 8° or 10°), and is a versatile vinegar in the restaurant industry.
Pickles & preserves
- Identical to crystal: ideal for marinating red onions, gherkins, carrots…
- The colouring gives a slightly brown tint that is more aesthetically pleasing in the jars.
Dilute with water:
➜ 1 part vinegar / 2 parts water
➜ + sugar, salt, herbs, spices
Marinades
For white meats, pork, poultry, tofu:
➜ 1 tbsp in the marinade to tenderize and enhance
Can slightly color raw meats → more visual than crystal.
Deglazing & sauces
Better visual appeal than white vinegar (less "raw" on the plate)
